Lemon Chess Pie
1 tsp. cornmeal
1 tsp. flour
2 c. sugar
2 tsp. grated rind
4 eggs
1/4 c. milk
1/4 c. melted butter
1/4 c. lemon juice
Mix cornmeal, flour, sugar and grated rind. Add eggs, beating after each
egg. Add milk, butter and lemon juice. Pour into pie shell. Bake at 350
degrees for 35 or 40 minutes.

The Famous Broccoli Salad from Nicole
2 lbs broccoli
1/2 purple onion, chopped
1 cup red grapes, sliced
1 cup white grapes, sliced
1 cup pecans
1 cup raisins
1/2 cup bacon, cooked & crumbled or Bacon Bits
Break broccoli into small pieces. Combine all ingredients for salad.
Dressing:
1/2 cup mayonnaise
1/2 cup sugar
1/2 cup sour cream
1 tsp. vinegar
2 apples, cut into small pieces
In a separate container, mix dressing ingredients. Pour over salad & mix
well just before serving. Wa La!
Mixing the apples with the dressing keeps them from turning brown.

Big Sky Cracked Wheat Bread
My favorite smell in the whole world is the smell of fresh bread baking.
This bread is sooo good. Whenever I bake bread it seems like
everyone in the neighborhood shows up and asks what smells so good. The
Prepared Pantry has some of the best
bread mixes and this Big Sky Cracked Wheat Bread is the top of my
list of favorites.

Chocolate Chunk Cookies
2-1/2 cups old fashioned or quick oats, uncooked
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted, butter
1 cup granulated sugar
1 cup packed brown sugar
2 eggs
1 teaspoon Vanilla
1 (12 oz.) pkg. Semi-Sweet, or Milk Chocolate Chips, or Chocolate Chunks
1 (6 oz.) bag Walnut Pieces
Place small amount of oats in blender or food processor container. Process
until powdered. Repeat until all oats are powdered. Combine oats, flour,
baking powder, baking soda and salt; mix well. Beat butter and sugars with
electric mixer until light and fluffy. Blend in eggs and vanilla. Add dry
ingredients to sugar mixture; mix well. Stir In chocolate and walnuts.
Chill at least 1 hour.
Form heaping tablespoons of mixture into golf ball-size balls; place 2
inches apart on ungreased cookie sheet. Bake at 375°, 12 to 15 minutes or
until lightly browned. Cool on cookie sheet 1 minute. Remove cookies to
wire rack to cool.
TO FREEZE DOUGH: Roll chilled dough into five 10x1-1/2 inch logs. Wrap In
foil or freezer proof plastic wrap. Freeze up to two months.
TO BAKE FROZEN COOKIES: Preheat oven to 375°. For large cookies, slice log
into 3/4” slices, halve. For bite size cookies, slice log into 1/2”
slices; quarter. Place chunks on cookie sheet. Bake 12-15 minutes for
large cookies, 8-10 minutes for bite size. Cool on cookie sheet 2 minutes;
remove and cool on rack. For moist cookies store in airtight container
after cooling 5-10 minutes. Each log makes approximately 2 dozen large or
5 dozen bite-size cookies.

Makes 4 servings
Weight Watcher Points - 2 Points*
1 medium acorn squash
1/3 cup pineapple juice
1 tablespoon light brown sugar
1/4 teaspoon cinnamon
Cut squash crosswise into 1/2 inch slices and discard seeds. Arrange in
large skillet. In a small bowl, combine juice, sugar and cinnamon. Pour
over squash rings. Bring to boil and reduce heat. Simmer, covered, for 25
minutes or until squash is tender. Arrange squash on platter and pour
remaining sauce over squash.

Honey Mustard Steaks

2 boneless beef top loin sirloin steaks, cut in 1-inch thick
1/3 cup Dijon style mustard
1 tablespoon fresh parsley
1 1/2 tablespoons honey
1 tablespoon cider vinegar

1/4 teaspoon black pepper
1 large onion, cut into 1/2-inch slices
Combine mustard, parsley, honey, viegar, water, pepper sauce, and black
pepper to make glaze for steaks. Place beef steaks on grill over medium

and brush with glaze.

1-1/2 pounds lean round steak, trimmed and cut into 6 pieces
1 tablespoon reduced calorie margarine, melted
1 (16 ounce) can stewed tomatoes, undrained
1 small onion, sliced
1 stalk celery, sliced
1 medium carrot, scraped and thinly sliced
1 teaspoon Worcestershire sauce
1 tablespoon all-purpose flour
1/2 teaspoon salt
1/4 cup water
Place each piece of steak between two sheets of heavy-duty plastic wrap,
and flatten to 1/4 inch thickness, using a meat mallet rolling pin. Cook
meat in margarine in a large skillet over medium heat until both sides are

Return meat to skillet; add stewed tomatoes, onion, celery, carrot and
Worcestershire sauce. Cover and cook over low heat 1 hour and 15 minutes
or until meat is tender. Transfer meat to a serving platter, and keep
warm.
Skim excess fat from tomato mixture. Combine four and salt; add water and
stir until blended. Stir into tomato mixture. Cook over medium heat 2
minutes or until thickened and bubbly, stirring frequently. Remove tomato
mixture from heat' spoon over meat.

1 lb. pork sausage
3/4 c. Aunt Jemima Syrup
1 (1 lb.) can peach slices, well drained
1 (10 oz.) pkg. Aunt Jemima frozen cinnamon swirl French toast
Shape pork sausage meat to form 8 patties; pan-fry until thoroughly
cooked. Meanwhile, pour syrup into saucepan; bring to boil and simmer 3
minutes. Add peach slices; heat thoroughly. Keep warm until ready to
serve. Prepare toast in toaster or oven according to package directions.
To serve, cut toast in half diagonally. Allow 3 triangles per serving; top
with warm peach syrup and serve with drained sausage patties.

Fruit Cocktail Bundt Cake
1 pkg. Pillsbury Yellow Butter cake mix
1 lb. 1 oz. can fruit cocktail, not drained
3 eggs
Combine cake mix, fruit cocktail with liquid and 3 eggs. Blend and heat as
directed on package. Bake in well greased Bundt pan, lightly floured, 40
to 50 minutes until top springs back when touched. Cool on rack 15 minutes
before removing from pan.
Frosting: Combine 3 ounce package cream cheese, 2 tablespoons light cream,
2 tablespoons sugar. Beat until smooth.

2 eggs, beaten

3 slices bread, cubed (I use heels of bread)
2/3 c. shredded carrots

2 lbs. beef, chopped
TOPPING

Stir together eggs, milk, salt and pepper and bread. Beat until bread is
broken up. Add onions, carrots, cheese and beef. Mix well. Form into 2
loaves. Bake 1 hour at 350 degrees. Mix topping, spread on loaves and
continue baking 15 minutes.

2 English muffins, split and toasted
1/4 to 1/2 c. spaghetti sauce
1/4 c. (1 oz.) shredded mozzarella cheese
Oregano
Pepperoni slices (optional)

with cheese and season with oregano. Bake in toaster oven at 350

2 pkg. Lipton Onion Soup Mix
2 cans cranberry sauce
2 bottles (8 oz.) Catalina dressing
8 to 10 chicken breasts
2 cans dark, sweet, pitted cherries (drained)
Mix top 3 ingredients together. Place some mixture in bottom of large
Pyrex dish. Place chicken breasts on top of mixture and cover with
remaining mixture. Cover with aluminum foil and bake at 350 degrees for
about 1 hour. When done, place chicken and sauce on
regular or wild rice. Heat cherries, drain and spoon on top of chicken.

Scalloped Zucchini
6 med. zucchini (2 lbs.)
1/4 lb. bulk sausage
1/4 c. onion, chopped
1/2 c. crackers, crushed
1/2 c. grated Parmesan cheese
2 eggs, slightly beaten

1/2 tsp. dried thyme, crushed
Dash of garlic, salt & pepper
Pare zucchini and cut in chunks. Cook about 15 minutes in salted water
until tender. Drain thoroughly, reserving 1/2 cup liquid. Chop zucchini
coarsely, you need at least 5 cups. Cook sausage and onion in skillet over
medium heat. Drain fat. Add to squash and add all other ingredients except
2 tablespoons of cheese. Mix well. Turn into ungreased 1 1/2 quart
casserole dish. Sprinkle with remaining cheese. Bake at 350 degrees for 40
to 45 minutes.
8 servings.

My granddaughter lives at Ft. Polk, La. Her husband is on his second tour

God healed his lung cancer last year and he feels God is going to heal him

decision. The doctors are afraid he is going to wait too long! You know
how men are, sometime they will not listen to us. (Know it all) We need

When whipping heavy cream always whip in a stainless steel bowl. Aluminum
bowls will cause the cream to turn grayish in color and
the cream will taste metallic.
Self rising flour is a mixture of 1-1/2 teaspoons of baking powder plus
1/2 teaspoon of salt per cup flour.
Use one Tablespoon (3 teaspoons) of regular active dry yeast to replace
cake yeast in recipes.
When making a cake, have all of your ingredients at room temperature.
You should leave 2 inches of space between the oven walls and your baking
sheet for good circulation.
Substitute 3/4 cup cocoa (unsweetened) and 1/4 cup Crisco for 4 squares
(ounces) of chocolate.

Coconut Cream Pudding
1-1/4 cups sugar, divided
1/4 cup cornstarch
3 cups milk
4 eggs, separated
1 cup flaked coconut
1 tsp. vanilla extract
In a heavy saucepan, combine 3/4 cup sugar and cornstarch, stir in milk.
Cook and stir over medium heat until thick and bubbly, cook and stir 2
minutes more. Remove from heat. Beat egg yolks. Stir 1 cup hot milk
mixture into yolks, return to pan. Cook and stir over medium heat until
gently boiling, stir 2 minutes more. Remove from the heat and cool to
lukewarm. Stir in coconut and vanilla. Pour into an ungreased 8 inch
square baking dish. In a mixing bowl, beat egg whites until soft peaks
form. Gradually add remaining sugar, beating until stiff peaks form.
Spread over pudding, sealing edges. Bake at 350 degrees for 10 to 15
minutes

1 pound lean ground beef
3/4 cup yellow corn meal
1/2 cup milk

1 package chili seasoning mix

Almond butter crunch correction. Sorry to tell you I left out the
butter in my recipe.
Almond Butter Crunch
2 sticks butter
1 T. light Karo
3 T. water
1 and 1/3 cups sugar. Cook to 300 to hard crack stage. Use a good candy
thermometer. Remove from heat and add 1 cups chopped toasted almonds. Pour
onto a greased nonstick pizza pan and let cool. Remove to waxed paper and
wipe excess butter off with a paper towel. Spread with melted chocolate
and top with finely diced toasted almonds.
To toast almonds just spread on cookie sheet and bake 5 minutes at 400.

Made the Sizzle burgers last night but combined it with another recipe I
had. First I melted the butter (oleo) in the pan, sliced up a couple
medium onions and sautéed them until they were soft. Then I added the
Worcestershire sauce, mixed well. After that I put 4 burgers in with them,
covered and cooked til burgers were done. WOW, what "gravy" over mashed
potatoes. DH walked into the kitchen saying "boy, that smells good" and it
was. Just my own take on a very good recipe. Thank you whoever sent it in.

Chili Egg Puff
10 eggs
1 lb. Monterey Jack cheese, shredded
1 pint creamed cottage cheese
1/2 cup flour
1 tsp baking powder
1 tsp salt
4 oz jar diced jalapeno peppers
Beat eggs until light and fluffy. Add rest of ingredients and blend well.
Pour into greased 9 X 13 baking dish. Bake at 350 degrees until brown and
center is firm -- about 35 minutes.

2 cans crescent rolls (or pizza dough)
2 (8 oz. each) packages cream cheese
1 package ranch dressing mix
1/2 cup mayonnaise
Assorted vegetables
Shredded cheddar cheese
Tomatoes
Press rolls (or dough) on greased pizza pan or cookie sheet. Bake at 350
for 8-10 minutes or until brown. Cool. Mix cream cheese, dressing mix and
mayonnaise together. Spread over cooled crust. Place sliced vegetables on
top, one kind at a time. Press down into cream cheese mixture. Top with
cheddar cheese and sliced tomatoes. Refrigerate.
Suggested Vegetables:
Broccoli, cauliflower, celery, carrots, green peppers, radishes, small

Hi Nancy, some time ago one of our ladies from this wonderful group was
kind enough to post a list of substitutions for wine when called for in
recipes. I did not copy or print it cause I use the wine. I Have a friend
that does not want to use wine in her recipes so if any one knows what
newsletter this was in please let me know so I can copy for her. I know
that chicken broth or white grape juice can be used instead of white but I
have no clue what to use if it calls for red wine. Would appreciate the
help.

I've seen lots of great Amish Recipes, but the one that I'm looking
for hasn't to my knowledge came thru. Its a graham cracker pudding recipe.
Anyone ever heard of such a thing?
I know its out there for I've enjoyed it at our local Amish Restaurant,
but they won't allow me to have the recipe. Don't know why. There's a
layer of pudding (don't know the flavor, vanilla?), a layer of crushed
graham crackers, then whipped topping. Don't remember if there is another
layer of pudding between the graham crackers & the whipped topping or not.
If anyone happens to have the recipe or know where I can go to snag it.
Could you please share it? Its really tasty, just wish I could make it

I bought my sweetie a wok ring for the gas stove, and a new wok for his
birthday, so now we are into stir frying and Chinese. We have tried a
couple of recipes so far, and have been very pleased with the results.
Beef & Broccoli
Sauce:
3T. Light soy sauce
2 T. Dry sherry
2 tsp. Cornstarch
2 tsp. Hot chili sesame oil (we used light sesame oil, and added some red
chili flakes)
1 tsp. Sugar
1 tsp. White vinegar (we used rice vinegar)
Main Dish:
3 T. Peanut, or vegetable oil, divided
1/2 c. Roasted cashews
1 T. Minced garlic
4 scallions, including trimmed green tops, sliced
1 lb. Boneless beef steak (flank, sirloin, or top round), trimmed and cut
into strips
4 cups broccoli florets
1 tsp. Instant beef bouillon, dissolved in 1/2 c. Hot water
2 ounce jar sliced pimientos
1 tsp. Hot chili sesame oil, or to taste (again, we used light sesame oil)
Combine sauce ingredients and set aside. Heat wok. Add 1 T. Oil, and stir
cashews about 1 minute. Remove.
Add 1 T. Oil to hot wok. Swirl. Add beef and stir-fry until meat is
browned (about 2 minutes), adding garlic and scallions for the last 30
seconds. Remove.
Add remaining oil, and stir fry broccoli for about 1 minute. Lower heat,
add bouillon, cover and cook gently for 2 minutes. Push broccoli to side
of pan or wok, pour in sauce, add in broccoli, and return all ingredients
and pimientos to wok. Taste, and add additional hot chili sesame oil if
desired.
We have also done this recipe using chicken, and it was wonderful.

Shrimp with Garlic Sauce
Sauce:
3 T. Light soy sauce
3 T. Water
2 T. Dry sherry

1 lb. Shrimp, peeled and deveined
4 cups broccoli florets
4 scallions, sliced, trimmed green tops included
2 T. Minced garlic
1 15-ounce can baby corn, drained, rinsed, and cut in thirds
Combine sauce ingredients and set aside. Add 2 T. Oil to hot wok or pan.
Swirl. Add shrimp and stir-fry 2 minutes. Remove.
Reheat wok. Add remaining oil, swirl, and stir-fry broccoli 2 minutes,
adding scallions and garlic for the last 30 seconds. Push broccoli to side
of pan or wok, stir in sauce and cook until bubbly. Return shrimp to wok
and add baby corn. Combine with broccoli, heat and serve.
Use Rice Wine in place of dry sherry if you want to. Rice Wine is also
called Aji-Mirin. Very sweet vinegar.
I have found that most of the ingredients can be substituted. For
instance, instead of broccoli, use any other vegetable, but maybe adjust
the cooking time. The important thing is the sauce. If you find a sauce
you like, use it for other meat and vegetables. We are just beginning to
"play" with our wok and the Chinese cuisine, but I find it's very
versatile.

Here are a few good tips for cooking Chinese food:
Assemble sauce ingredients, prepare meat and veg's, and line all
ingredients on the counter as they are to be added to the wok or pan. The
book that came with our wok says that The Golden Rule of Chinese chefs is
"hot wok, cold oil". Always stir fry over high heat unless the recipe
states otherwise. You can test to see if your pan or wok is hot enough by
adding a drop of water. If it sizzles, it's time to cook.

To the Nancylander's looking for recipes for a convection oven: You can
use any recipe for a convection oven that you do for a regular oven. A
convection oven uses a fan to circulate the heat in the oven, making food
cook a little faster, and more evenly. I have had one for years and years,
and recently got my first gas oven ever. I had to almost learn how to cook
all over again! My only suggestion would be to cook things for less time,
and/or turn the heat down 20 degrees or so. Just watch your food closely.

Crocker book published around 1955. I made it often as my eighy children
loved it. They have long been on their own but out of the blue, one of

had candied fruit, nuts & pretzels, if I remember correctly. I'm looking
for the recipe -- or one similar.

Carolyn in West Tenn. asked about removing black marks from hardwood
floors. I was told by the fellows who refinished my floors to use baking
soda as a very mild abrasive to remove black marks from the floors. When
we had workmen crawling all over our house with building our addition, I
had lots of black marks from their boots and shoes. I used plain water ,
dampened a cloth, sprinkled soda on the mark, then rubbed, but not too
hard. The marks came right up. I wiped the area with a damp, clean cloth,
then buffed with a clean, soft cloth. Maybe this will help you.

I happen to like a lot my Euro-Pro Convection Oven I got for $49.00 at
Linens and Things, with an additional 20% off coupon. But I needed to cook
a few chickens before I learned to lower the temperature and timing first.

This is for Lyn in Houston wanting lunch ideas for her husband.
Put any kind of hot soup in a thermos. (I use tomato). Tie a string or
piece of thread around a hot dog and put in in the soup leaving enough
thread hanging out to be able to pull the hot dog out.
Put mustard, catsup, relish, or onion on a hot dog bun and wrap it. At
lunch time all he has to do is pull the hot dog out (it will be cooked)
put it on the bun and eat it. I used to fix this for my husband when he
worked outdoors and he really liked it.

there will be 132 people there, so will have to make a few batches.

I have found the following to be a perfect meringue recipe. Sugar doesn't
bead and it does not stick to knife when cutting, at least it works for
me:
Perfect Meringue
3 Egg whites
1 Jar of marshmallow creme. (You can also put in teaspoon of vanilla)
Beat egg whites until somewhat frothy, add entire jar of marshmallow creme
and/or vanilla.
Continue to beat until stiff peaks form. You will have to beat a little
longer than you would had you used just sugar. Add the meringue to the pie
as you normally would. Put in 400 oven until desired golden brown is
achieved. I know it sounds strange but it sure does work for me. And as
always Nancy, thanks for the tremendous job you do each day for us.

Looking for a Raspberry Sour Cream Pie. All I can remember is that
it had sour cream raspberries and it was cooked on the stove and then
placed in a homemade pie crust.

In reference about cube steak being tough. Never buy the cube steak
on display. It is always bottom round steak and the toughest of the round
steaks. Pick out a package or two of top round steak and have your butcher
cube it. My butcher told me this 40 years ago. It makes a more tender
chicken fried steak, or for anything you use cube steak for. I have a
recipe I made up 40 years ago, a steak and gravy over mashed potato. I am
going to try to write it to send as I just eye ball it. It is my Son's
must have recipe when he comes home to visit and super easy to make.

Marvelous Mushrooms
12 large Mushrooms
2 servings of Stove top, chicken flavored
1/2 c White cooking wine
Parmesan cheese
Wash mushrooms and remove stems. Prepare Stove Top Stuffing according to
package directions. Pour wine in a baking dish. Stuff each mushroom with
about 2 tsp of stuffing and top with parmesan cheese. Place in a baking
dish and bake at 350 degrees for 15-20 minutes or until tender.

Mine does not call for grapes, but they could be added. This is one of the
best chicken salad recipes I have found.
Chicken Salad
8 cups cooked, chopped chicken (cook chicken with 2 or 3 bay leaves)
2 cups chopped celery
1 cup sweet pickle relish
2½ cups mayonnaise
1½ cup chopped pecans
Mix well and chill.

Tammy--I am sorry that people didn't come to your aide when you were in so
much distress. I live in Florida part of the year and my neighbors are
great. Did you let the church know that you were having problems? I had a
friend that had problems and no one knew she needed help. The hospitals
will no longer give out info and some will not say yes or no if you
inquire if they are a patient. I hope you feel better. I live in
Zephyrhills and I know we would help you if possible.
