Deviled Eggs

Deviled Eggs with Sweet Pickle Relish

1 dozen hard cooked eggs
1/4 c. of sweet pickle relish
1/3 c. of mayonnaise or salad dressing
Paprika

Cook eggs. Peel eggs. Slice eggs in half lengthwise. Put yolks in bowl. Using a fork, crumble the yolks until fine texture. Add the relish and mayo to the yolks and mix well. Fill the egg shells with the mixture and sprinkle with paprika.

Deviled Eggs with Ranch Dressing
1-1/2 doz. cooked eggs
1/4 tsp. black pepper
1/2 tsp. onion salt
1/2 tsp. garlic powder
1-1/2-2 c. mayonnaise
1-1/2 tbsp. Ranch dressing
1/2 tsp. mustard
3 tbsp. real bacon bits
4 tbsp. grated Cheddar cheese
Pinch of dill weed
Paprika

Cut eggs in half. Put yolks in bowl and mash with potato masher. Add all other ingredients except paprika and mix well; then fill eggs with yolk mixture. Sprinkle with paprika.

Easy Deviled Eggs
12 egg, boiled
1 tsp. lemon juice
1 tsp. garlic powder
1 tbsp. mustard
2 tbsp. Miracle Whip
Paprika

Boil eggs. Cool eggs, then peel. Cut eggs in half, place whites upright in dish. Place yolks in a bowl, mash by hand. (You don't want them smooth.) Add the rest of the ingredients and stir. The filling should be rough, not smooth. Fill white halves with yolk mixture. Sprinkle paprika on top lightly for decoration.

Deviled Eggs with Olives
6 hard cooked eggs
1/4 c. mayonnaise
2 tbsp. finely chopped stuffed green olives
1/2 tsp. Worcestershire sauce
1/2 tsp. prepared mustard
1/8 tsp. salt

Cut eggs in half lengthwise. Remove yolks and in small bowl mash with fork. Blend in mayonnaise, olives, Worcestershire, mustard and salt. Spoon mixture into egg white halves. Garnish with whole olive in each egg half. Makes 12 halves.

DIABETIC EGG CUSTARD
3 eggs
5 or 6 pkgs. Sweet n' Low
2 c. milk
1 stick melted oleo
3/4 c. Bisquick
1-1/2 tsp. vanilla

Blend all together. Spray deep Pyrex dish with Pam and pour into dish. Bake at 350 degrees for 30 to 35 minutes.

DEVILED EGG POTATO SALAD
9 hard boiled eggs, peeled
1/2 c. chopped onions
1/4 c. shredded pimentos
1/4 c. shredded green pepper
1/2 c. mustard
1 tbsp. salt
6 c. boiled potatoes, cubed
1/2 c. shredded dill pickles
1/4 c. shredded celery
1 c. mayonnaise
1 tbsp. paprika

Cut 6 boiled eggs in half; remove yolk. Place yolks in bowl and mix with 1 teaspoon pickles, 1 teaspoon mustard, 1 tablespoon mayonnaise, dash of salt; stiff eggs with the yolk mixture. Set eggs aside. Mix potatoes with remaining ingredients. Add eggs (flaked with fork) last. Top with paprika and arrange deviled eggs around top of salad for decorative look.

EASTER EGG DYES
Red cabbage leaves
robin's egg blue color

Canned blueberries
blue
Orange or lemon peels
yellow
celery seed, or ground cumin
yellow
Carrot tops
smoky yellow green

Ground turmeric
yellow.
Yellow Delicious apple peelings
pale lavender flecked with soft rust color

Brown (not white) onion peels
orange.

Fresh spinach
pinkish color with gray-green buffs.

Fresh beets, cranberries,
or radishes, or frozen raspberries
pinkish-red tone

Strong brewed coffee
beige on brown eggs

Dill seeds
brown-gold shade

Chile powder
brown-orange one

Purple or red grape juice
or beet juice
gray color.

If eggs are to be dyed, washing in a mild detergent solution helps to remove the oil coating so that the color adheres more easily. To dye eggs, place in a pan and cover with water. Add 1 tablespoon of vinegar to each cup of water and add the chosen dying material. Bring to a boil; reduce heat and simmer gently 20 minutes. The color will deepen or change if the eggs are left in the dye solution overnight. Make sure to keep eggs refrigerated after coloring process, if hard-boiled. You can also color empty, washed & rinsed (inside and out) eggshells.
