CHICKEN AND CUCUMBER SALAD

2/3 c. Iceberg lettuce (or Romaine)
2/3 c. cucumber, shredded
1/2 c. cooked chicken, shredded
2 tbsp. cooked ham, shredded
1 tbsp. mustard (paste)
2 tbsp. sesame seed paste (seasoning sauce)
2 tbsp. soy sauce (seasoning sauce)
1 1/2 tbsp. vinegar (seasoning sauce)
1 tsp. sesame oil (seasoning sauce)
1/2 tsp. Accent

Cut lettuce into long pieces. Put on plate. Arrange the shredded cucumber on top of lettuce, then place the chicken shreds on top of cucumber. Sprinkle ham shreds on top, place in refrigerator to keep cool. Mix the sesame seed paste with soy sauce, then add vinegar, salt, sesame oil in a small bowl for seasoning sauce. Pour seasoning sauce and mustard over salad. Mix all ingredients thoroughly before serving. NOTE: Other kinds of meat and vegetables may also be used. Bean vermicelli or agar agar may be substituted for lettuce. In this case it should be soaked in hot water. Serves 4 to 6 persons.
